This is my favorite morning meeting potluck dish. It's easy, not too expensive, bakes up yummy and looks like you spent a LOT more time on it than you did.
1 dz. eggs
1 lb. sausage OR bacon, cooked and crumbled
1 lb. Velveeta cheese, shredded or in small cubes
2 c. bread cubes or croutons
2 c. chopped vegetable mix - bell peppers and onion (can add tomatoes and chiles or jalapenos if desired)
1c. bread crumbs (buttered)
Preheat oven to 350. In a large bowl, scramble eggs. Fold in vegetables and cheese. In a large well-greased casserole dish, layer bread cubes at bottom, add meat, pour egg mixture over everything. Spread bread crumbs over top. Bake at 350 for approx. 20 minutes, until egg is done.
Freezes well, transports well, reheats well. Great for potlucks and funeral/baby shower/etc. carryovers.
