Francesca's Hawaiian Chicken Meal
Happily go to the market and buy a healthy amount of chicken thighs, drumsticks, breasts or any combination thereof
Preheat oven to 350 degrees for a half hour
Choose a very large bowl, pan or pot and add the following ingredients:
4 cups soy sauce
1 cup teriyaki sauce
1 cup Olive Oil
I clove garlic, finely chopped
A few sprinklings of brown sugar
4 Tablespoons peach jam
2 tablespoons vinegar
Stir ingredients
Add chicken to pot let marinate for three hours
Put chicken in the oven and let cook for 45 minutes to an hour, depending upon how "done" you like your chicken
Turn chicken over every fifteen minutes and baste with marinade
For the last ten minutes, turn oven up to 400 degrees to make skin extra crispy
Serve with Japanese white rice, place pieces of chicken over rice and then use a ladle to drip sauce from pan over rice and chicken, in other words, enjoy the gravy!
Hawaiian style side dishes recommended are macaroni salad, kim chee, a fresh garden salad and lomi lomi salmon (see below attached link for recipe)
