The Best Zucchini, Apple or Carrot Cake

It's that time of year again when many gardens are overflowing with zucchini. I wish I could say I had one of them , but alas, the snails are enjoying the fruits of my labor well before I can get to them. Pesky little buggars. I have heard that you can get rid of them by placing a bowl of beer next to your plant. Figures doesn't it? They enjoy a little nip with their chosen snack of the day, namely my zucchini. Sounds like they have been spying on me again.

So if you do have zucchini, carrots or apples, then this is the recipe for you.  It will take care of four cups of that crop for you. It freezes well, so you can make plenty for later on. And the recipe is really easy. 

Zucchini, Apple or Carrot Cake


  • 4 cups peeled, cored and shredded apple, carrots or zuccini
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  •  3 eggs
  • 1 cup chopped walnuts
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 cup vegetable oil


  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 X 13 inch pan.
  2. In a large bowl, blend the sugar with the eggs. Add the oil, and mix well. Mix in flour, spices, salt, and baking soda. Stir in the nuts and the apples, carrots, or zucchini. Pour batter into prepared pan.
  3. Bake for 40 minutes. Serve warm or cooled.
If you so choose you may make a cream cheese frosting:
  • 1/2 cup butter, softened
  • 8 ounces cream cheese
  • 4 cups confectioners' sugar
  • 2 teaspoons vanilla extract
or simply sprinkle with confectioners sugar
or serve with whipped cream adding some cinnamon, nutmeg and ground gloves to the cream for a lightly spicy treat.

Beer next to a plant? I would sit there and shoo them away for the beer?

"Sluggo" works really well.

Of course....a cream cheese frosting . . . Have you ever made this using all 3 ingredients of zuc., apples, carrots????? (You could call it ZAC cake. Really. And a bit of coconut thrown in = ZACC Cake. )
