Cold Strawberry Soup...Foodie Tuesday

Now that strawberries are plentiful, you might want to consider making this wonderful cold soup. It's a great way to start dinner on a hot day. And it's easy too. You could even serve it as a dessert with cookies of course!

 Cold Strawberry Soup

 

Ingredients:

2 pints strawberries, washed and hulled

1 cup half and half

1 cup sour cream

1/3 cup sugar

2 tbsp. lemon juice

Directions:

In a blender or food processor puree strawberries. Pour into a large bowl and add half and half, sour cream, sugar and lemon juice. Stir until well combined. Chill. Serve with a garnish of mint leaves or not.

That's it! Delicious and refreshing

I made strawberry pie yesterday. The soup sounds interesting. I think I'll try it when the pie's gone, which should be soon.

Missed you, Christine! There's another week or so for local strawberries, methinks, but I had nice ones in Wilmington. This sounds like a delicious dessert too. I can imagine the lovely pink color.
