Watermelon Gazpacho

It's better to use seedless watermelon for this obviously but a standard seeded melon has better flavor.

2 cucumbers, peeled, seeded and roughly chopped

1 red bell pepper, remove all seeds and ribs, roughly chopped

1 small red onion, roughly chopped

2 very ripe tomatoes, skin and seeds removed

1 small watermelon, scooped out, remove any seeds about 4 cups total

1 cup tomato juice or V8 (preferred)

2 Tbsp red wine vinegar

2 Tbsp X virgin olive oil

1 Tbsp chopped cilantro

dash of hot sauce

salt and pepper to taste

Combine all ingredients and let flavors blend for a short while. Puree with either a hand blender or in a conventional blender. Check seasoning and adjust if necessary. Add more watermelon if preferred. Chill and serve cold.

Just picked up a seedless watermelon yesterday. And it's a heat wave here in North San Diego County. So, this is going on the table this weekend. Plus, it fits my "Cheap Bastid" sense of style
