Through no fault of anyone other than my own, I missed the interview with Joel from the SLO Chai Tea, who I hope to interview soon for a double post next Wednesday, so I apologize for the lack of timely posts... however, I will not leave with just this!
Last Farmers' Market I stopped to talk to Tim from Oak Hill Mushrooms and got some Shiitake mushrooms to experiment with!
So, my choice of recipe was a Shiitake Fettucini Alfredo:
For this you need:
1 small onion (diced)
1 garlic clove (diced)
Shiitake Mushrooms (sliced)
1 TBsp of Butter
Salt and Pepper
Alfredo Sauce (Home made or your favorite brand)
Fettucini
Start by sautee-ing the onion and garlic together on the butter with a bit of salt and pepper, then when the onion gets soft, throw in the Shiitake and continue until ready (you will know because it will smell so good!)
In the meantime prepare your fettucini, and heat up the sauce. Once everything is ready, mix, toss and serve with some grated Parmesan Cheese if you wish!
If you have good Shiitake Mushroom recipes I would love to hear from you!
