So, check out his amazing work, you'll be very glad you did!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! i'm married to my first and only husband, Edo, of 32 years. we have 9 children (!), 6 boys, 3 girls, and, yes, i do know about birth control, thank you very much! i'm only on OS to share a little of what i know and to find out what you know, too. when i'm not around for awhile, it's 'cause i've gotten behind in my laundry and can be found folding hundreds of socks, but i'll come out of the dungeon and visit again, promise!

The Infamous Zucchini Rises Again, as a Foodie Tuesday Cake!

Zucchini is generally considered a lowly vegetable, an immature fruit of the plant, being known by botanists as the swollen ovary of the female zuke flower. There, I told you and I bet you don't ever want to eat one again! If you dare get past that little factoid, I invite you into the Recipe Zone, where no one comes out alive! hee, hee, hee, he, he, he...@@@:)

Today, I will endeavor to teach you how to turn this humble, cucumber-like squash, into a delicious and yes, my husband would say "scrumptious", dessert cake, complete with a clove flavored cream cheese frosting.

 Torta di Spezia Della Mandoria Dello Zucchini,
or, Zucchini Almond Spice Cake~
 
Heat oven to 350 degrees.
Grease square pan, either 8x8x2 or 9x9x2.
 
Mix:
~2/3 cup packed brown sugar
~1/4 cup butter
~1/2 teaspoon vanilla
~1 egg
Stir in:
~1 cup all-purpose flour
~1 teaspoon baking soda
~1/2 teaspoon ground cinnamon
~1/2 teaspoon ground cloves
Stir in:
~1 small zucchini, shredded and drained (1 cup)
~1/2 cup chopped nuts, I used almonds
 
Spread batter in pan. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely. Frost with Clove Spiced Frosting.
Cut into 6 rows by 4 rows. 1 bar, 100 calories. 
 
Clove Spiced Frosting
Mix:
~3/4 cup powdered sugar
~1/8 cup butter, or cream cheese
~1/8 teaspoon ground cloves
~3 to 4 teaspoons milk
 
Voila! You have a nice, Autumn dessert that makes the house smell fabulous. Edo loved it, and that's what matters to me most!

Good Morning. My son makes those faces out of Yellow Squash when we go to DC for the White House Farmer Market. We Love that market and always anticipate Bufford Buzzard, cukes, and other flamboyant politico's to buy winter gourds, and those green ostrich eggs.
The double-yoked deviled eggs can be purchased by the saloon manicurist?

You're right, the zucchini is totally underrated! I don't know if you have ever had the squash flowers fried as fritters...but that is a real delicacy! Just wash the flowers, pat them dry, and dip them in your favorite "fritter mix" batter (get a box at the supermarket) and fry in olive oil or Mazola corn oil....drain...salt and pepper...enjoy.

Sally, Baking is one of the easiest, most cozy things to do when it gets cold. And, you can freeze most baked goods as long as you wrap them up tight. Hope you try one day!

Clove Frosting!!!!!
That clove cream cheese brings back memories of getting fillings without novacaine.... any replacement? (not that I cook or bake). Otherwise, it sounds delicious.
and here i was proud of making banana bread yesterday... but clove frosting? wow.

O'Really~ of course you could easily swap out the clove for cinnamon or nutmeg or just plain vanilla frosting. But, clove is amazing and I don't think it would remind you of the horrid dental appointments!
