Had an angioplasty lately, or maybe a stent placed in a coronary artery, and you are just feeling too good? You miss that feeling of dizzyness when you stand, or that out of breath feeling after half a flight of stairs? I've got the recipe for you.
Asparagus! Normally considered a healthy vegetable, except maybe to anyone standing nearby the first time you pee after consuming. Here is the most artery clogging dip in the Universe! But, mmmmm, is it delicious!
Asparagus, Aritichoke dip.
Ingredients:
1 bunch of asparagus, stems peeled with a carrot peeler.
1 can artichoke hearts (not pickeled), reserve the liquid
1/2 cup of parmessan cheese, grated
1/2 cup of creme cheese
1/2 cup of mayonaise
2 Tbs Olive oil
2 cloves of garlic, peeled
1/2 tsp salt
1/2 tsp black pepper
half a pound of bacon, fried to crispness
Steam the asparagus until soft
Put the garlic and olive oil into a food processor. If using a blender, then mince the garlic first. Blend/process. Add the other ingredients, except the bacon and blend/process until smooth. Add liquid from the artichoke hearts to achieve an almost, but not quite runny consistency. Crumble the bacon into the mixture and mix gently. Let stand for 1 hour. Substitute the bacon greese for the olive oil if this all sounds to healthy.
Use as a dip for raw vegetables if you want to salvage some health, chips if your arteries are clogged enough, or fried pork rinds if you want to relive your last trip to the hospital.
