Green conjures up different images to different people: nature, money, envy, Christmas trees. In preschool, we are taught that blue and yellow make green. Not so simple-- besides different amounts of blue and yellow, greens contain red, black, white, and other colors. And each shade has its own personality and feeling.
I love all greens in their infinite variety. This is how green feels to me:

My favorite green juice is a blend of granny smith apple, celery, and ginger. Fragrant, crisp, and a pick me up:
Invigorating Green Juice
Use a juicer to extract the juices of 1 granny smith apple, a stalk of celery, (preferably Chinese celery, which is less fibrous and incredibly fragrant), and a 1 inch piece of fresh ginger root. Serve icy cold.
