Culinaria: Pot Stickers

BBQ Beef Pot Stickers

 1 cipolline onion, minced or 1 shallot, minced

1tsp  garlic paste

1tsp  chili paste

1tsp  ginger paste

1 Tbs brown sugar

1 Tbs soy sauce

2 Tbs Hoisin sauce

1/2 cup cooked brown rice

1/2 lb 96 % lean ground beef

Combine all ingredients and refridgerate for 1 hour.

Use Gyoza pot sticker wrappers.

Spread 12 wrappers on a cutting board, wet swipe one side of the wrappers with water, place 1tsp filling in each, fold as usual.  Repeat two more times for a total of 36 pieces.  Freeze half if not needed.

In a nonstick pan with a tight lid:

Heat 1Tbs peanut oil to shimmer, add stickers to fill pan in one layer.

Brown  (~2 minutes) and turn,  cook for 1 minute more.

Add 4 Tbs water to edge of pan and immediately cover with lid.

Cook three minutes or until water is evaporated.

Remove to plate and drizzle with soy sauce to taste. Makes 36 pieces.

The last time I tried to make potstickers, they didn't stay together very well. These are inspiring me - I wish I had them for breakfast RIGHT NOW. Thank you for this recipe!
The trick is to swipe one side all the way to the edge with water before you put the meat on. The meat gets in the way of a good wetdown and then it won't stick together tight.

The innards of these is very low fat, so the peanut oil is plentiful. It becomes part of a sauce when the soy sauce hits it, so no need to skimp on it.

They really are good. A lot of trial and error went before this incarnation.
