My kitchen was painted a brilliant yellow last year and as a result, it always looks like sunshine is pouring in. It has become one of my favourite places to sit even on overcast days. The cats' dishes are here and that means that a cat is always nearby; eating/complaining/drinking or scrounging for dropped food.
I love this recipe because it is so simple. I can make a batch whenever I have a craving for homemade without a lot of work. The ingredients are staples and always on hand.
Within an hour, I have a fresh baked cookie to go with my tea and my cats have crumbs to hoover up. Everyone is happy. The recipe makes just two dozen so they are gone long before they have a chance to go stale or before I get tired of eating them.
LAZY PEANUT BUTTER COOKIES
Preheat oven to 350°F.
1/2 c. peanut butter (crunchy is best)
1/2 c. butter, softened
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 c. flour
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking soda
Mix peanut butter and butter together in a large mixing bowl until smooth.
Gradually add all other ingredients.
Blend until well-mixed.
Spoon tablespoon-size dough onto a greased cookie sheet.
Flatten cookies with a criss cross mark using a fork.
Bake for 10 minutes or until golden brown.
