Foodie Friday--Baked Carrots. What's Up Doc?

Once, for a dinner party, I searched everywhere for a unique carrot recipe. I wanted that orange color to go with the rest of what I had prepared. I finally found this one in my grandmother’s old cookbook. I had to write it up and send it to guests.

  • 3 tablespoons butter
  • 1/4 cup finely chopped onion
  • 2 cups peeled, shredded carrots
  • 3/4 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup water


Melt butter in saucepan. Add onions and sauté for about 3 minutes. Add the carrots and stir.

Place in a baking dish (about 1 quart) Sprinkle with the salt and sugar. Pour over them the water. Cover and bake at 350 until they are tender (about 30 minutes or so.)

I'm not sure what "shredded" meant, so I used a thin matchstick slice on my madolin, a bit thinner than the matchstick carrots you'd find already done in the supermarket.

I'll try it. We eat a lot of carrots and a different way is always worth looking at.

I think my kids might even eat this one. They will eat any veggie raw but hardly a cooked vegetable will pass their lips. I used to make something like this but it was a combo of carrots and beets, it was really pretty.
mamoore: the sugar might do the trick for the kids. Still here in MI. Had to bring the car back. I leave first thing on Monday. Actually, this was a great "transition." It got me out of Douglas/Saugatuck and forced me think of the future. I'm actually looking forward to NC, especially to start doing some art! Happy Easter!

sage: yea, they are pretty good. I once read an article in Psychology Today about the repressed "gay themes" and characters of Bugs Bunny. It was hard to argue against it . . .

Brenda: Somewhere I have a recipe for baked sweet potato sticks with thyme and chilis. Delicious.
