Foodie Tuesday: Zucchini Bread

I still remember the first time I encountered zucchini bread as a teenager. I had a hard time getting my mind around the concept. At the time, zucchini was something my mom made me eat, and not anything you would bake into something sweet. Fortunately, the pathway into my naturally resistant-to-new-foods teenage mind had already been cut with carrot cake. Heck, if you could get something that good out of carrots, why not zucchini? After one bite, I was sold forever. Grated zucchini, mixed into the batter, brings moisture and tender texture to what is essentially a spice cake.

Zucchini Bread

Do you have some fresh garden zucchini and don’t know what to do… make a sweet and spicy bread. You can stir it up and have it in the oven in minutes.

 

Ingredients:

3 eggs

1 cup oil

2 cups sugar

2 cups grated zucchini

1 tablespoon vanilla

3 cups all-purpose flour

1 tablespoon cinnamon

1 teaspoon salt

1 teaspoon baking soda

1¼ teaspoons baking powder

¾ cup nuts, chopped

 

In a large bowl, beat eggs and then add oil, sugar, zucchini and vanilla until blended. Stir all dry ingredients together and add to egg mixture. Fold in the nuts.

 

Spoon mixture into greased and floured loaf pans (2/3 full).

 

In a 350 degrees F preheated oven, bake for one hour or until golden brown and a cake tester comes out clean.

Stephen… Everyone has a wee bit of southern in them… much like a bit of Irish. Adding cream cheese is a great topper!

Blue… I use Splenda as a substitute and it taste pretty much the same.

JDeMain… but are they as big as the one in the video? That sounds great with coconut… I’ve used it in Carrot Bread, but not zucchini… I’ll try it, thanks.

L&P… chocolate is good in anything… I put some even in my homemade chili!
George, one of the vendors at our Farmers Market had zucchini bread last year and it was excellent. I have made bread before that didn't need yeast and to rise, which looks like the case here since the recipe calls for baking powder and soda. I love this kind of bread not only for its great taste and nutrition, but also its high rate of success for the novice baker. Thanks for posting the recipe and I'll try making this myself instead of buying it somewhere!

John…. You can’t go wrong with this recipe. Speaking of local farmers markets… I once sold loaves of this bread at the Christmas Bazaar at Christ Church on Quaker Hill in Pawling… after the event, I got more request for the recipe than any other.

Walter… thanks. Here is a suggestion for using extra zucchini – grate like in this recipe and add it to your meatloaf or to your homemade hamburger patties… it will add moisture & substance without affecting the overall taste.
I'm getting hooked on sneaking veggies and fruit into bread. I just made Emeril's banana nut bread. What makes it Emeril? About a stick and a half of melted butter in the mix. Now that's some real good bread!

I wonder how this would do as a savory bread or, mixed with cheese, a fritter batter?

You are right about zucchini growing in a garden. It is like all the damn rabbits, who venture in - it's prolific!
George, showed this video to hubby. We laughed because after two weeks in CA we came home and picked a SIX AND A HALF pound zuch!

Funny thing about me, while I actually liked carrots cooked as a vegetable, I've never been all that wild about carrot cake. But I do like Zucchini bread. I guess I'm weird. =o)
