This sauce, a variation of a Bobby Flay classic, will go well with any grilled steak. I prefer Filet Mignon, but a savagely tenderized slab of flank steak would do nicely as well.
Tangerine Habanero Sauce for Vengeful Steak
2 cups fresh squeezed tangerine juice (best if fruit is stolen from a the neighbor you hate's tree - a little added vengeance )
1 tablespoon honey
1 Habanero chile
1/4 teaspoon salt
Combine the tangerine juice and honey in a small sauce pan and place over medium high heat. Cut a slit into the habanero and place the pepper in the juice mixture. Bring the juice, honey and habanero to a boil and simmer until its reduced to about 1/2 cup. Remove from heat, remove chile pepper (hide the evidence), and spoon over freshly grilled steak.
