Vintage Recipe Cards: Emerald Cantalope

Further adventures in really bad food photography from the 1970's!

Ingredients

2 cantaloupes, cut in half and peeled
1 envelope lime-flavored low calorie gelatin
1/2 cup unsweetened pineapple tidbits, drained
3/4 cup rye crisp crumbs
Artificial sweetener to equal 2 teaspoons sugar
1/8 teaspoon cinnamon
2 tablespoons lemon juice

 Directions

Prepare gelatin according to package directions, using1/4 cup less water than indicated. Chill until partially set; fold in drained pineapple. Arrange cataloupe halves on a shallow tray; fill in cavities with gelatin mixture and chill until set. Roll rye crisp with a rolling pin to make fine crumbs and add sugar substitute and cinnamon.  To serve: cut cantaloupe halves in half again; roll peeled side of wedges in lemon juice, then in crumbs to coat.

Serves: 8

Preparation time: 1 3/4hour

Approximate calories per serving: 50

I know! Had they said graham cracker crumbs it would have given the dish a whole other vibe and just been a bad photo.

JK - I just got a whole new batch of these suckers in the mail this weekend and they are all worse than the ones I already had. Let's just say that the sandwich loaf and the frankfurter crown were amateur hour.

This is delightfully retro-vile! Most excellent. I'm appalled by the haz-mat colors involved. Fabulous!

cartouche - Headcheese? Really? Did you have to go there? That's just vicious. Did you notice the nice clean perfect edge on the gelatin? My husband is convinced that they cut out a picture of the gelatin and taped it on the cantaloupe.

I love cantelope and love green jello with raspberries instead of pineapple! And for me, give me all the sugary calories, minus the chemicals in artificial sweeteners or low cal anything! I'm bad, I know, but if you're going to do it? Just sayin! Great recipe! Forgive the dissection!

I want someone to make this recipe and take pictures... because... this has to be made of rubber! No way jello can stay put in a wedge of melon like that; especially while rolling around in lemon juice and rye crisp crumbs... Gawd, it's so so so scary looking! Re-name it Cyclops Eye Pie, and it's a surefire Halloween hit!!
