I'm making it right now, and it's a staple at my house. This is the whole package--it's tasty and rich (but not that bad for you), the ingredients are cheap pantry staples, and it's easy--no fussing with separating egg yolks, no finnicky low simmering, no multitude of dishes to clean, and it takes no longer than 15 minutes to whip up. My parents made it all the time, and it's even better poured into a graham cracker pie crust.
In a 1-quart microwave-safe bowl, combine 2/3 c. sugar, 5 T cocoa powder, 3 T cornstarch, and a pinch of salt. Stir to combine. Pour in 1 1/4 c. milk, and whisk until thoroughly blended. Add in another cup of milk--you can use skim, whole, 2%, cream if you're feeling decadent, whatever. Microwave on high for 2 minutes; stir. Another 2 minutes, stir. 3 minutes, stir. It should be done after the total 7 minutes, but in case not, keep microwaving in 1 or 2 minute increments until you like the consistency. Let cool. Eat. Yum.
