Candy Cane Cheesecake (Annual Reposting of Holiday Recipes)

Last year, several OSers posted some amazing recipes that resulted in a Holiday Food Orgy beyond our wildest dreams. Today, I'd like to reprint my favorite recipe post from that time and invite my fellow bloggers to link up in the comments with their Ghosts of Recipes Past. Hopefully, we'll bring a whole new "generation" into the, um... fold.



Candy Cane Cheesecake

What You'll Need:

What 'Ya Need
 



1 cup Graham Cracker Crumbs

Mash roughly a full sleeve of whole crackers like this:

¾ cup plus 3 Tablespoons sugar, divided

3 Tablespoons butter, melted

3 packages full fat (!) cream cheese, softened

3 eggs

4 squares Baker’s White Chocolate, melted (one ounce each)

¼ teaspoon peppermint extract

2 cups thawed Cool Whip

½ cup chopped candy canes



The Easiest Way to Smash Candy Canes. Ever.

Leave them in the little bags:

Smash 'em up.

Cut of the top of the bags:

Cut off the tops of the bags
 

Dump them out into the measuring cup:

Half cup o' canes.
 

Note the lack of mess. Yay!

How to Make It:

Preheat your oven to 325°F if you’re using a silver 9-inch springform pan or 300°F if using a dark nonstick 9-inch springform pan.

Mix graham crumbs, melted butter and 3 tablespoons of sugar in a small bowl. Press firmly onto bottom of pan. Bake crust 10 minutes until golden brown like this:

Beat cream cheese and remaining ¾ cup sugar with an electric mixer until well blended. Add eggs, one at a time, mixing on low speed eafter each addition just until blended. Stir in melted chocolate and extract; pour over crust.

Into the oven with you!

Bake 45-50 minutes or until center is almost set. Run your knife or metal spatula around rim of pan to loosen cake like this:

Cool before removing rim.

Not yet!

Refrigerate at least 4 hours.

Top with the whipped topping and chopped candy just before serving.

Cool Whip covers a multitude of evils.

Crack is Whack.
 

I just put little blobs of topping all over the cake with a pastry bag. You can also use a gallon zip top bag with a corner cut out of it. Sprinkle on the candy:

Store leftovers in refrigerator.


So, that's the recipe for yet another thing that you'll need to chase with a Lipitor. I'm sorry to have to repost, but the two littlest Kastens are ill today and I'm strapped for time.

I've been up 5 minutes and this is the first thing that popped up on facebook..... I can't even begin to tell you how scrumptious this looks!

that recipe is a pip! btw, this post actually made me tear up a little, looking at your cute happy kids. I think I have come to understand all this talk on OS about "family". I didn't get it when I first started reading here. I do now.

Absolutely wonderful and the best holiday cheesecake I have ever seen!!! No joke here, but I asked my eldest daughter to make her fabulous cheesecake for my Christmas present! Don't need anything else, cept health and happiness for the kids and grand kids.

I'm sure that I will just love the one you will be overnighting to my home sweet home - I'd try making myself but, you know, broken oven and all. For those who are hammer impaired (obviously not Cat), I noticed they now sell pre-smashed candycanes at the grocery store in the holiday baking area. I also enjoy those Andes mini-candycane baking bits quite a bit.
I think I gained a pound just reading this!

Jodi, this looks so delicious and comforting. And I love that Pudge! My baby birds are in college, which seems impossible. But I can tell you they would love this. Jodi, I may be sufficiently brave to try this, though baking is not usually my thing. And I have to say, the family photos are even sweeter and more appealing than the recipe. I hope you all have a terrific holiday.

I think I avoided looking at this because of the calories that would be transmitted from my screen. But I am so glad I stopped by. Your children are adorable. Pudge -- oh what can I say about that boy? He could probably support your family as a child model.
Cheesecakes are one of my favorites, I tried this recipe the last month and my kids liked it a lot! They found an online candy store and ask me to buy them some candies that they like, I know that too much candies are not good and try to do this not so often.
