There is MALARKEY in the Air

The naughty ale makes her nose turn red.

A dead give-a-way that she has been tipping a few...

That's all it takes for me dear mum, Rosie, from the Mc Manley clan,

She is.

No Irishmen or lass can rhythm work a lick.

Showing up late for work or not at all

Pretending to be sick;

Not at all a neat trick.

Need to throw in a Kraut or a Brit

To make this little ditty click.

Proud was he to enfold her arm

On many an eve. 

A wedded night bliss

(first one out of the gate)

Did I , she conceive.  

 

No longer here to interrupt or explain,

Dear Rosie is now floating on a Heavenly plain. 

Not a cook or a lover,

She bore him seven children.

Made Irish Lasagna on occasion,

But never on meatless Fridays,

As was her persuasion.

Let us see what is in it for a fine St. Patty's Day.

ROSIE'S IRSH LASAGNA 

 (my mom's recipe)

1 lb. ground beef with 2-3 cloves of minced garlic, cooked and drained (set aside) 

1 package medium wide egg noodles cooked, drained (set aside)

In a medium bowl, mix together 1 container small curd cottage cheese,  an 8 oz. container of softened cream cheese, one cup sour cream with 1 small green pepper finely chopped, 1 bunch scallions finely chopped.  Mix well.

Butter a  rectangular (9x13) baking dish and layer the egg noodles, the creamed mixture and then the meat.

Top the meat with 2 small cans of tomato sauce (sometimes 3) and then top the casserole with 2 cups of grated parmesan and mozzarella cheese.

Bake in 350 degree oven for about 45 minutes or until corners are lightly browned and bubbly.

It's really good.  Trust me.  My Irish mamma says so.

 

 And so does my Cuban, Irish, English and German baby daughter!

Linda - A little over scheduled but that is how it rolls for St. Patty's Day. Lunch with sassy sister, Sheila (Mexican...yep),,,Then Happy Hour with best girlie girl friend, followed by dinner with a few friends and family for traditional Irish fare. I'm exhausted already. No complaints. Most Irish folk have ben celebrating for a week already. My day is tame!

Has anyone ever thought of turning the Bay green? Now, there's an idea!

Leon - That is the truth! A good excuse to take a break from the growing crisis that is global life. A little fun and silliness is the tonic we all need, at least for a bit o' time today, with friends and family...a gathering to celebrate life, when no celebration seems appropriate. So many mixed feelings this St. Patty's Day.
Cath - probably about 75% but the other 25% is Celtic from Scotland and Wales so I consider myself 100% Celtic :-)

malarkey! was my grandmother's favorite expression, which I later figured out meant bullsh*t - maybe not an exact translation, but close enuff!

How can you go wrong with sour cream AND cream cheese. You can't, no matter what nationality you are. Sorry about your rabbit. When I was little, being a rabbit was the first thing I wanted to be when I grew up.... in a way I still do....
I've given the recipe to the cook in the family and hope to report back shortly.
