Ardee-Inspired Beet Salad

Rate: 5 Flag

I never used to eat beets before until I tried Ardee's Roasted Roots, and I discover that beets are filling, healthy and delicious.  So I went looking for more beet recipes and found this one.  It's so good.   You will need:

3 large beets or more
1/2 onion
crisp tart apple
some greens, your favorite
garbanzo beans and feta cheese (optional)

For the dressing:
1/4 cup rice wine vinegar
1/3 cup of vegetable oil or your choice of oil
2 tablespoons brown sugar
minced garlic (however much you want)
2 teaspoons of soy sauce (more or less)

Peel the beets and cut them into chunks.  Put them in a covered casserole dish with about 1/4 inch of water.  Bake at 350 until fork tender, chill.  Slice up the onion, peel the apple and slice it up.  Add the chilled beets and dressing, mix it all up and serve on greens.  I use red leaf lettuce or butter lettuce.  You can add feta and garbanzos to it if you wish.  Cheap, easy and delicious.  Nice change from potato and macaroni salad.

Or you can skip the garbanzos and feta and add something that makes it your own, sprouts maybe. I can't believe I posted over that Nicholas Bros post. I would be embarrassed to admit how many times I have watched those Nicholas Bros dance since I put that up. Embarrassed that is, if anyone read my blog. Poor, poor me.
This sounds delicious. I love beets. Did you ever try juicing them? Makes one strong tonic.
Adding feta will make it excellent. Can't wait to try! Thx
This sounds great and I thank you. I will try it this weekend.
You are both so welcome. I've never tried juicing them, but it's an idea, and hello Dr. Spudman, my neighbor in the NW. I did not mean to insult the potato salad.
Rated because I desperately need beet recipes (I’ve got a backlog from CSA deliveries), and I’m hoping this one will finally make me like them :-)
