So, I'm sick.  My throat is hurting to the point of gagging every time I swallow.  Marc was supposed to grill either chicken or steak, but I asked him if we could have soup.  Usually, I'd make homemade veggie beef soup, but today I really wanted French onion soup.  After looking at the soup mixes to see if there was any decent French onion soup, I decided against the dry mix and make homemade.  I thought it would be super hard, but it really wasn't.  I cut up about a thousand onions (in reality, probably about 7-8 small) and began caramelizing them.  I stirred.  And I stirred...and stirred...and stirred...and finally about 30ish minutes later had semi caramelized onions.  Then, I added a box of beef broth.  Deglazed the pot with a little broth before I added all the broth.  It's turned out pretty good so far.  Probably should've caramelized the onions just a tad more, but didn't.  Now, waiting on Marc's cheesy croutons to finish baking.  Oh, yeah, and I put a splash of soy sauce after the broth, and when the onions were caramelizing I added salt and a little sugar.  Not bad for a first time with no solid recipe!
