Hello everyone! 

Here we are again for our weekly foray into the wonderful world of Top Chef Masters, Open Salon Liveblog style!

First off, a BIG Iron Pundit thank you to Pretend Farmer, who valiantly filled in for me last week, as I was off someplace with no televisions or computers.  Hell, I barely had cell service.

Hubby has been out of town this week again, so I’ve been cooking up a storm.  I’ve managed to turn the chipotle shrimp and corn pudding into a staple of my cooking repertoire. I’ve also been refining a pasta recipe involving pancetta and egg and peas over the last couple of weeks.  I am getting close to a breakthrough on that I think.

But tonight I decided to make tonight’s pre TCM test kitchen experience extra-special:  doing crab cakes and baby bok choy.  And then I kicked it up another notch by inviting one of my friends over to help me cook it.

To say that Matt loves to cook is to say that Tiger Woods plays a little golf.  Matt not only adores cooking all the things that I do, he’s also into the history of cooking.  He not only knows how to prepare a roast chicken, he can prepare it using a recipe from the 14th Century.   Trust me, we’ve been having all sorts of fun cooking up food tonight, so much so that it’s been a bit of work to tear ourselves away to watch tonight’s episode.

We’re down to four chefs now: Hubert Keller, Rick Bayless, Michael Chiarello and Anita Lo.  We already know from the incessant previews that tonight’s episode will feature the return of cheftestants past, as “helpers” in the kitchen.  Ah, apparently someone else noticed that the cheftestants pack a much more dramatic punch than these seasoned, successful master chefs….

Let’s begin…..

9:56 p.m. -- Matt and I are settling in watching the last of last week's episode.  Matt REALLY doesn't like Michael Chiarello.

9:57 p.m. -- Still can't stand Kelly Choi.  She's getting sort of acidic.

9:59 p.m. -- I'm so looking forward to Michael Chiarello throwing Dale into a slow cooker.

10:01 p.m. -- Matt is dying to eat in a Rick Bayless restaurant.

10:01 p.m. -- Kelly Choi is wearing skinny pants.  Bad. Idea.

10:02 p.m. -- The chefs look genuinely worried about this challenge.  This is why I don't really like Chiarello as much as the others -- he really is kind of a one-trick pony.

10:04 p.m. -- Hubert likes the blindfold.  It would figure that the french guy would think of the sex twist.

10:06 p.m. -- NONE of the chefs prove miraculous in the blind taste test.

10:07 p.m. -- Chiarello wins?  How lucky can one guy get?  Hubert is now in last place star-wise.  One thing I am noticing with the eliminations is that more so than in regular Top Chef, winning the quickfire challenge is  a HUGE advantage.

10:08 p.m. -- This could get really, really interesting.  Old dogs and young guns....we'll see how it goes.

10:09 p.m. -- It's interesting to see how each of the chefs works.  I think it's funny that the old boy network ends up being a an old GIRL network.  Anita Lo knows one of the cheftestants and asks her who she should pick.

10:11 p.m. -- Chiarello's approach of testing cooking skills is not going over well with the cheftestants.

10:14 pm. -- It's really interesting to me to see the approach to authority that the younger folks have as opposed to the older chefs.

10:16 p.m. -- Chiarello wants them to pronounce his name correctly. It does seem a little bit like an ego trip....

10:19 p.m. -- Fabio goes with Chiarello.  Rick gets Richard Blais.

10:20 p.m. -- Elan won his season, yet he is one of the last ones picked.  Spike is with Hubert.  Of course, egomaniac Spike thinks it's because he's so good.

10:22 p.m. -- The teams are looking rather interesting -- and the approaches they are taking are so different.

10:24 p.m. -- Chiarello's macho attitude is getting in the way.  The interesting thing here is how much of a test of leadership this is.

10:26 p.m. -- Anita Lo in some respects has a huge advantage because she's worked with Jamie before. 

10:30 p.m. -- Matt is worried that Anita is already behind and in the weeds.  We're debating how valid Chiarello's approach is....the authoritarian thing is very Italian, very old school.  Is it appropriate here?  We can't decide.

10:31 p.m. -- What the hell is Kelley Choi wearing?  "She's wearing ugly, that's what she's wearing!" says Matt.

10:32 p.m. -- I like Rick Bayless.  He's just such a great guy. 

10:33 p.m. -- The twist: it is now an outdoor event in direct sunlight.  Anita Lo is completely fucked.  A raw bar in direct sunlight is NOT going to work well.

10:35 p.m. -- Anita Lo is really in the weeds.  Hubert realizes he's under the gun because he was last in the quickfire.

10:37 p.m. -- The snarky long haired  brit is unimpressed with the raw bar.

10:39 p.m. -- How the hell did Hubert get 18 different dishes out there? 

10:40 p.m. -- Rick Bayless is now a convert to liquid nitrogen.

10:41 p.m. -- Matt and I are oddsmaking on the outcome....both of us agree the top two will be Rick Bayless and Hubert Keller.  And as much as I love her, I think Anita Lo is headed for the chopping block.  Not only was her food disappointing taste-wise, a raw bar does not involve cooking, which means the judges are going to automatically downplay it.

10:44 p.m. -- That dress is freakin' killing me!

10:44 p.m. -- They LOVE Rick Bayless's buffet.  Every dish seems to be really a standout to the judges.

10:46 p.m. -- The judges are gushing over Hubert and his 18 dishes.  I think Oseland may have an orgasm.

10:47 p.m. -- Chiarello's swordfish didn't really go over well.  And even he admits that he was less collborative than he could have been.  I don't know anymore if Anita Lo is really out. 

10:50 p.m. -- The judge's deliberation is pretty predictable.  They loved Hubert, they loved Rick, they hated Anita Lo's and Chiarello's offerings.

10:55 p.m. -- Cannot wait for Top Chef Las Vegas!!

10:56 p.m. -- As expected, Rick and Hubert are in the top.  Rick keeps getting fours.

10:56 pm -- it's coming down to the wire with Hubert. Hubert squeaks by getting all 5s from the judges.  Again, could have been a very different result had the quickfire turned out differently.

10:58 p.m. -- Anita Lo not doing so well.  Chiarello is not doing much better, but he manages 4 stars from Gael Greene.    Anita Lo is out of the competition.

11:00 p.m. -- I am sad to see Anita Lo go.  But she really was the big disappointment from this week.  Next week... the finale.  See you then my lovelies!!!!

well, I am watching the judges and will watch from the beginning later, not usually my m.o. They love Bayless and Keller, don't they?
oh poop, once again I've missed hanging out with you fun ladies & this great show. I have it on the DVR and will follow along tomorrow.
I hope that if they ever bring this show back for another season, they will get a new host.
Sad for Anita, she didn't bring her best game. I still like her very much.
Chiarello is such an alpha male, isn't he? why am I always attracted to this type?
And now I am watching it from the beginning. Oh, well. Thanks Liz! Sorry I was tardy :-).
On the one hand, I understand that a chef wants to be in charge, but there's carrying it too far.

Since I don't TV, I am completely lost, but you got me curious!
After watching it from the beginning, I see Kelli brought her best hoe bag and Michael is a dick. i withdraw any sexual attraction I felt towards him in the past.
Up here in the vast frozen north where I get no Bravo and have to rely on you for my fix. . .thank you. I would have liked more of the cheftestant drama thrown in to kick it up a notch. Glad to know Hubert survived.
editing was interesting last night, playing up Chiariello as a difficult loser. I think he might have seen (was it) last season's Top Chef where one chef was led down the primrose path by one of the past contestants.

When the judges scored him, he did pretty well. either they gave him props for all his prior wins or his swordfish was probably not as bad as they were saying OR something in his menu was delicioso.

love chiarello, btw. and I love his approach to cooking which seems to me simple preps creating complex flavors, one or two people in the kitchen. I have never had the impression he was a restaurateur so much as a terrific chef. Plus he ain't bad on the eyes...wouldn't mind watching him whip up a late night something or other.

Anita Lo came on strong and slowly faded, week after week. Hubert is adorable, a fantastic chef and watching him last night made me wish I had become a chef and worked for him. He really is a spectacular guy to work and create for. Rick is obviously an exceptional chef but he annoys the crap out of me. Maybe it's that all knowing, pseudo mellow attitude I get from him. But don't think I wouldn't love to eat at his restaurant.
btw, WHERE did they get kelly choi? she annoys the crap out of me too.
I think I like Top Chef Masters better than the original show. You would think there would be a lot more egos involved, but instead you have world class chefs having fun cooking and competing. The original show is way to much back biting and self importance.

A good example was this last show. Here are up and coming chefs with the opportunity to work with chefs at the top of their game and instead of soaking up experience they worried they did not get enough respect. I am old school you earn respect based on accomplishments and merit not because you show up. Besides being on past shows none featured last night have risen to any great levels in their craft.

One important lesson I learned in school was when you are in the presents of someone who is more knowledgeable, shut-up and listen and keep you opinions to yourself. That is how you learn new things and better yourself for the future.
Kelly Choi was/is on several shows on WNYC, which is a public television station in New York. It is not the largest one however.
I agree that Bayliss took a real risk (and Chiarello had good reason to want underlings and not equals). Remember when Carla allowed her former cheftestant/sous chef to talk her into a menu that did not reflect Carla's talents? That's how she lost in the finals. All that aside, however, Chiarello looked like he was about to pull a Gordon Ramsay on occasion. Bayliss is as relentlessly Mexican as Chiarello is Italian. Keller is often French but also surprisingly versatile. I really wonder whether an ethnic cuisine can ace out Keller's ability to cook for different palates. BTW - I agree that Bayliss comes off as someone I would much rather work for than Chiarello, but I also think he's as competitive as Mr. Macho. I think he may just hide it better.
Hubert really kicked ass. I'd put money on him to win, but Bayliss keeps smoothly doing well while making it look easy and being self-deprecating. I also like how down to earth Keller seems given his rep and achievements. I'm betting he wins, but by a hair.

Kathy, if you guys up north can get universal healthcare, surely the Bravo network cannot be far behind!

Nofrills, I find it interesting that you like Chiarello but not Bayless. I have to admit I was totally predisposed to like Bayless, having had previous experience with him in books and restaurants. I think he comes by his good-naturedness honestly. He does a TON of yoga and became a lover of Mexican food after traveling there extensively, researching all the regional cuisines of the country for a few years. I think anyone who is humble enough to genuinely and lovingly explore a culture that is not his own is good people.

MTodd, this is the generation gap I was talking about. Folks from the baby boom and baby bust generations have been through a recession during their work lives, and know that no one guarantees you success. Many folks in their 20's have never had to live through a time where their economic future was uncertrain, and believe employers should work to keep them, as opposed to them working to show they deserve the job. I think it set up an interesting dynamic. Rick Bayless was pretty frank on his blog: root4rick.com, that none of the chefs wanted Spike because they thought he was too egotisitical and not a team player. I personally think Dale was an IDIOT to piss off Chiarello like that. Dale is a contestant on a reality show, Chiarello has a culinary empire that includes successful acclaimed restaurants, TV shows and a retail catalog business. Dale made an ass of himself in front of a guy that commands respect in his industry. Not. Smart.

William Anthony, you are correct. Kelley Choi doesn't have much to offer as far as culinary chops and I don't know of anyone who thinks she's added anything as host for the show.

Bonnie, you raise an excellent point that Bayless and Chiarello may be hampered by their reliance on a single ethnicity in cuisine. I think that Bayless may be slightly more flexible than Chiarello. But we'll see.

Silk, Chiarello has from the beginning been squeaking by, staying in by the skin of his teeth. I think he is a talented chef, but it has been a loooooong time since he's been on the line in one of his restaurants, and gotten his hands dirty to this extent. Hubert is incredibly creative, no doubt, but sooner or later, everyone has an experiment that goes wrong. And creative types who take more risks make more mistakes. They can also win big. Hubert will either walk away with the competition, or flame out spectacularly. There will be no in between. I think Chiarello relies on his personality more than the others, which in a contest like this comes off as smarmy.

I think it will come down to Hubert and Bayless. One advantage Chiarello is that he is a TV chief which means he is use to working with time restraints that are outside the normal restaurant cooking disciplines. Anita Lo is a thoughtful chief who likes to plan out her menu and approach to her dishes over days not hours or minutes.

But, all it takes is one good screw up and you are out. I think the remaining three all have a good shot at winning.

yes, I do very much admire Chiarello and find my innate response is that I do not care for Bayliss' personality, although I can only imagine that his cooking is quite superb. No argument there. I also know Chiarello's cooking is fabulous because I've been following him for years and have used a number of his recipes. I'm hoping he will win but I suspect it will be either Hubert or Bayliss. The three of them are more than worthy. it's going to be an excellent finale!
