Foodie Tuesday: Cherry Tomato-Feta Skewers

  Tomato Feta Skewers

This simple, but elegant recipe that adds color to any table.

Ingredients:

  • 12 cherry tomatoes
  • 12 cubes feta cheese
  • 12 basil leaves

Cut the cherry tomatoes in half. On a toothpick, place one half of the tomato. Then a cube of feta, followed by the other tomato half. Top it off with a basil leave. Drizzle with caper oil (or choice of alternative infused oil). Season with salt & pepper and serve.

Presentation suggestion: Stand prepared skewers inside clear coctail glasses.

VR- Snort! Choke! Picky, picky, picky...You aunt Paula suggests that in deference to your "recipe" criteria, I add: Broil for 5 seconds. Serve. LOL

Oh, I just had tomatoes and fresh mozzarella salad yesterday! Swimming in olive oil and a hint of balsamic, basil and black pepper. Now I want another one!
I love cheery tomatoes! In fact, I love raw tomatoes in general. I think it'll be perfect with some wine.
I agree with Buffy, this sounds easy and delicious. These 3 ingredients are one of my favorite summer salads.
But, when I first saw the title of this post, I mis-read it. What my mind registered was Cherry tomato and FLEA skewers and I did a double take.
