Foodie Tuesday: Reuben Meatloaf

1 pound ground chuck
12 oz.  corned beef , finely chopped
1 11 oz. can condensed tomato bisque soup
2 1/2 cups bread crumbs, soft
3 eggs, slightly beaten
2 Tablespoons parsley, chopped
1 large clove garlic, minced
1 8 oz.  sauerkraut, well drained - finely chopped
1/2 cup Swiss cheese, shredded
1/2 cup caraway seed
2 teaspoons horseradish
2 slices Swiss cheese, cut in 8 triangles
 
Preheat oven to 350 degrees.
Thoroughly mix ground beef, corned beef, 1/4 cup soup, crumbs, egg, parsley and garlic.
On waxed paper, pat meat very firmly into a 10x15 " rectangle.
In a small bowl, combine sauerkraut, shredded cheese and caraway seed; press into meat to within 1" of edges.
Roll tight in jellyroll fashion, starting at the short edge. Seal seam and ends.
Place in a 2-quart baking dish (8x12"). Bake  for 30 minutes.
Combine remaining soup with horseradish; spoon over loaf.
Bake for 15 minutes more.
Arrange swiss slices over loaf, overlapping slightly. Bake 1 minute more, until the cheese just begins to melt.
Remove, let stand for five minutes. Slice and serve.

Mercy! I do love meatloaf. All kinds. Mmmmmmmmmm....you're makin' me want some, bad. Can I come over to your house, please? I'll make some Colcannon mashed potatoes to go with it.
I love meatloaf but more importantly, I DOUBLE TRIPLE LOVE Reubens! I never considered this combination. I'm printing this out, thawing out some chopped meat and damn girl, this is going to be the PAR TAY tomorrow!
OK, now you've done it! Given me an "oral orgasm" this early in the morning! We love both meatloaf and reubens! So this will definitely get made--and soon.

Mothership... there are various foods that I call my 'comfort foods' - Meatloaf is at the top of that list and this one will be the one I make next time. Love when a cook adds the unexpected ingredient to a classic recipe!
