Foodie Tuesday: Beyond Best Baked Beans

3 large cans Pork and Beans, drained
1 large White Onion, finely chopped
1 pound Bacon, diced
1 cup Dark Brown Sugar
1 tablespoon Vinegar
1 teaspoon Dry Mustard
3/4 cup water

1.    Fry  bacon until crisp.

2.    Remove bacon to the side and drain on paper towels.

3.    Saute chopped onion in bacon fat, until translucent.

4.    Add brown sugar, vinegar, dry mustard and water to onions.

5.    Simmer for 5 minutes over medium heat ,in order to dissolve sugar, stirring constantly, to avoid scorching.

6.    Pour sugar/onion mixture into 2-quart cassarole.

7.    Add drained beans and bacon. Mix well.

8.    Bake at 350 degrees for approximately one hour. (Top should appear deep brown, slightly crusted, and still at a slow bubble)

Sounds great! I want that corn, too! With lotsa butttttter!!!! And lotsa salt!!! Screw the arteries. There may not be butter & salt where I wind up. :-) Or Great Baked Beans! Mother, you can be my cholesterol provider anytime !!!!
I love baked beans - and this recipe sounds easy so I'll have to give it a try. I remember when I was little, my uncle used to bury a huge pot of baked beans in a hole in the ground with a smoldering fire and take them out what seems liked days later...they were so good but seems like so much work for beans!
I love me some baked beans. They are perfect picnic fare. Yours sound yummy. I like to poison mine with some fried sliced smoked sausage or kielbasa.

Thanks, for stopping by, All. I know my foodie posts are decidedly NOT healthy PC. I'm all for taste and as long as I don't eat my favorite recipes everyday or in mass quantities, I seem to be doing quite well in the artery department. Well, that, or I'm entirely delusional and I'm actually living the Picture of Dorian Gray! ;-D
