Foodie Tuesday: Crab, Bacon and Portabella Sandwiches

4 strips bacon, cooked and crumbled
2 large portabella mushrooms, thickly sliced (4 total)
1/4 cup onions, finely chopped
1/2 cup clelery, finely chopped
1 cup crabmeat, shredded
1 cup Swiss cheese, shredded
1/3 cup parmesian cheese, grated
1/2 cup mayonnaise
8 large green or black olives, pitted and sliced
4 halves English muffins

1.    Cook bacon until crisp; remove. Saute mushrooms and onions in bacon drippings until softened. Cool , remove mushroom slices and mix onion with bacon.

2.    Top each English muffin half with one portabella mushroom slice. Mix crab, celery, cheeses and mayonnaise. Mix into onion/ bacon mixture. Spread 1/4 onto each mushroom-topped muffin half and top with 1/4 olive slices.

3.    Place in single layer on cookie sheet and bake 15 minutes at 400 degrees.
