Pork roast leftovers... awesome recipes...Open Call

Monday I made a pork roast.  Last fall I got my first dutch oven and also a rather large skillet.  I have been trying to teach my sweetie to cook more than chicken, so it takes some tools and some spices.  He has gotten pretty darn good with mixing the spices and has mastered the roasted chicken.  But I digress... this was seasoned and rubbed pork pot roast and the leftovers. 

Tuesday night is LOST and laundry night.  We didn't get to laundry.   But, while watching the fabulous episode about Desmond (sigh) we got to simultaneously eat these burritos.  Think it was synergistic. Talk about viewing the alternate universe filled with true love.  Sweetie ate three. 

Slices of pork roast, made into smaller carrot stick size pieces; potatoes, mushrooms, carrots and pot roast "gravy" leftovers.  Warm up in sautee pan.  Heat tortilla over flame, then wrap around a big spoonful of the pork, etc.  Spoon over favorite salsa (that day was the Mango Lime from Sprout's).  Fill any gaps with more gravy.  

Wed: eat cold slices of pork while putting rest on plate, warm up briefly.  No more potatoes and carrots.  Eat while standing up in kitchen, salt to taste.  

Thurs:  Realize you aren't going to the store and you just cleaned out most of the fridge.  There are a few great items now showcased on the shelf. 

Start boiling water, pour in half a bag of Trader Joe's dried tortellini that is still in cupboard, cheese filled is fine, but pesto will do.  In a sautee pan, heat crushed garlic, diced tomato (Fresh) and smoked paprika (a little) in olive oil, on low heat.  Stir in cubed pork roast and some fresh sage from the garden.  Find half a container of cream in the fridge and pour about 1 cup over this whole conconction.  Stir, bringing up bubbly bits of garlic and paprika, until the cream turns pale orangey red.  Drain cooked tortellini, toss into pan with concoction.  Toss, and heat gently until thickened.  Fold in a bit of fresh basil, sprinkle with salt and pepper.  Kiss your sweetie (or pet the cats, or both) and eat until happy and quiet.     Pat tummy twice and go to sleep early. 

Tomorrow: Scrambled eggs with pan seared pork and roasted red pepper paste.
