Every family has their favorite dish or dishes they always want for get togethers and mine is no exception. Hot Fudge Pudding Cake is one such yummy and decadent favorite, but the one that is most looked forward to is mom’s potato salad. For years mom was the only one who could make it just right, but a few years ago my sister got it written down as she made it and now we can all make it almost as good as mom’s.
Funny how even with “the” recipe, it can still come out not exactly the same and of course there are those who make their own little changes. For example, my sister Betty (to us, Janet to the world) used pickle juice in place of the vinegar and it was actually pretty good.
This Memorial weekend was no exception for get-togethers or for a big bowl of mom’s potato salad. Extra big as we heard the “C” boys were coming and they do LOVE that potato salad! As an extra surprise we found the cute potato in the picture at the top in the potato bag for that added touch of love, I suppose. We decided to use it as decoration for the finished salad and not cut it up.
Recipe as follows:
Janet Heiniger’s Potato Salad
Scrub and boil in water to cover:
5 lbs white (russet) potatoes
1 Tbl. Salt
Test for doneness by sticking a fork into the potatoes. Make sure they are done all the way through.
Cool potatoes, peel and cube.
Hard boil 8-12 eggs. Cool, peel and slice.
Place the following ingredients in a blender and blend until smooth:
2 Cups Best Foods Mayonnaise
1 Tbl. White vinegar
1 heaping Tbl. Prepared yellow mustard
1 tsp. Sugar
1 small onion, peeled and cut into eighth’s
Combine cubed potatoes and sliced eggs (reserving some for decoration on top of salad). Sprinkle with 3 to 5 tsp. of salt. Pour sauce over all and stir to mix thoroughly. Decorate top with reserved egg slices and sprinkle with paprika (optional). Cover and refrigerate till served.
Notes: it is a hotly debated topic here that the mayonnaise MUST be Best Foods Mayonnaise, and mayonnaise, NOT Miracle Whip/Salad dressing! Of course use your own favorite brand but I don’t guarantee the results! LOL!
Usually the one thing we find when it’s not quite right is that it needed more salt.
We always try to boil the potatoes the night before and drain them and let them sit overnight in the pot before peeling and cubing them.

As for pickle juice... maybe. Pickles in my potato salad? That's just criminal. May as well buy the crap at the supermarket deli if you're going to do that.
