To Be or Not To Be?
I'll admit it....I firmly believe in the basic tenets of PETA ... no fur, no leather, no testing on animals, freeing lab animals, no dissection in schools...but although I believe in being vegan, or at least vegetarian, I find it incredibly difficult to actually become one. Especially when my husband is an avowed carnivore.
I've tried to go the vegan route before... right after a Whole Foods store opened in my neighborhood. I found that they make it incredibly easy (if expensive) to buy everything you would need for a healthy, vegan lifestyle. However, I found that soy is an absolute staple in that diet and although I can tolerate eating soy products for about 2 weeks (which make it oh-so-much easier to forego meat), after that time, it must build up in my system or something, because after that I cannot tolerate anything soy. That leaves me with the grains/veggie/fruit option which just doesn't do it for me.
My goal this time around is to find something that works for me...my body, my taste buds AND my conscience.

One trick of becoming vegetarian is learning to change the "meat and two veg" idea most of us grew up on: meat as the main component of a meal, replaced by an equal amount of soy products--which doesn't always go over well.
If you think of soy as an addition to your meal rather than the main course, you might tolerate it better. Try adding some sauteed tofu to a stir-fry with rice or noodles, or have a veggie burger with all the trimmings and a baked potato, or a fakin' bacon BLT made with grilled tempeh. And find other sources of protein: red beans and rice, black bean tacos, spicy falafel, lentil soup...vegetarianism can be delicious! Good luck!
