Here's a recipe worth trying......with thanks to the wife for this one:
2 cups flour
1/4 cup sugar
1 - 2 teaspoons baking powder
3 eggs
1 cup pumpkin
... pumpkin spices to taste
milk....however much you need to get the desired consistency.
mix flour, sugar, baking powder and spices together
add eggs and pumpkin, start mixing add milk until the batter looks like pudding then cook
Note: these may take a bit longer to cook than regular hotcakes, so keep an eye on them.
You can also make regular pancakes and use egg nog instead of milk.These are also a nice treat forthe kids...........and adults too!!
One day I noticed the wife making a large batch of pancakes and taking the leftover pancakes and freezing them.(They will keep for several months. Put them in gallon storage bags, gently squeeze as much air out as possible and take them out as necessary)
One thing people tend not to realize about pancakes is that they make excellent and inexpensive snacks for the kids. Microwave them for a few seconds and put margarine and/or peanut butter on them and you have a quick and easy snack. The wife makes smaller pancakes for this purpose.
As for the pumpkin pancakes, what a great way to bring in the thanksgiving/holiday spirit than to start the day with them.
