Who doesn't love a good grilled cheese sandwich, dripping with buttery cheddar? It is the ultimate comfort food, cheap and quick and easy. Go on, have another one!
Grilled cheese my way is perhaps a little more complicated, but not much. It is essential to use a dense bread, like a sourdough, and a ripe, sharp aged cheddar. Emmentaler or gruyere also works as a good filler.
I like to dip the sliced bread into a bowl of beaten egg, as if you were going to make French toast. Gently melt some butter in a skillet and then fry the eggy bread until golden brown on both sides. Then place a few slices of cheese between two slices and place back into the skillet on low heat until the cheese is melted. The bread is soft and yummy and it is simply delicious!
Another favorite which works well for a light supper is to place one cupful of chopped ham into a bowl, add two cups of grated cheese and two beaten eggs, a goodly dollop of mayonnaise and a teaspoon of prepared mustard and mix. Spread thickly on bread that has been toasted and then place under a broiler on medium heat until it is golden brown. This goes well with a good beer or a glass of wine!
