Corn Pudding: A Late Arrival on This Foodie Tuesday

Corn Pudding: A High-Calorie, High-Fat Side Dish. Don't kid yourself. It's fattening. It comes from cans and mixes and cartons of dairy products. Mmmm.

Preheat oven to 325 to 350, depending on your oven. Spray a large casserole dish (or two small ones) with nonstick cooking spray.

1 can whole corn

1 can cream style corn

8 oz. whole milk

8 oz. sour cream

4 T butter, melted

4 T bacon  drippings (or another 4 T of melted butter)

1 box Jiffy Corn Muffin Mix

salt to taste

1 T coarsely cracked black pepper

Combine all ingredients except pepper & pour into prepared casserole dish(es). Sprinkle pepper on top. Bake 45 minutes until it tests done; it should set up like custard. If necessary, turn up heat a little in the last minutes to brown.

Gracielou & Jane, it is decadent & delicious & incredibly easy. Sometimes when you combine things from cans with prepackaged mixes, the result is yummier than the sum of its parts.
Butter, bacon fat and Jiffy? Yum yum yum!
Shan & Ric, it's very rich, as you might imagine . . . definitely not health food . . . but 'tis the season for an indulgence or two.
