Foodie Tuesday: Watergate Cake

From a yellowed clipping found in Gran's cookbook. The date reads1974. I remember it tasting absolutely scrumptious. I believe it was called “Watergate Cake” because there were a lot of “weird” ingredients in the mix.

 

WATERGATE CAKE

 

1 pkg. cake mix, yellow or white
1 pkg. instant pistachio pudding
1 c. oil
3 whole eggs
1 c. Canada Dry Club soda
1 c. nuts (chopped very fine)

 

Mix cake mix, pudding, eggs, oil, club soda and nuts together. Blend well and beat 4 minutes. Grease and flour Bundt pan. Bake at 350 degrees for 45-50 minutes. Cool in pan for 20 minutes. Turn out on plate and when cool, frost with icing.

 

WATERGATE ICING

2 pkgs. Dream Whip
1 box instant pistachio pudding
1 1/4 c. cold milk

Blend all together and beat until light and fluffy. Spread on cake. This cake must be kept refrigerated at all times.

I can't describe how delicious Watergate cake is! I tasted it at the house of a friend in Minnesota 20 years ago and immediately asked for the recipe. I quit cooking and baking some years ago and almost never read foodie Tuesday but had to confirm how scrumptious this cake is. Now I want some...
This sounds like a lovely cake, but the main thing I thought of was how my church nursery used to use pistachio pudding as finger paint, since it didn't stain and wasn't a problem if you licked your fingers. Funny the memories that come up. Thanks for the recipe!
