Broc O'Chicken Alfredo with penne pasta
Ingredients:
1 head of broccoli or 1 bag frozen brocolli florets
2 medium chicken breasts (with skin and ribs)
1 box (16 oz.) penne rigate pasta
1 Tbs extra virgin olive oil
1 clove garlic
1 jar (15 oz.) Classico Alfredo sauce
1 bay leaf
1 whole nutmeg (optional)
Directions:
In large pot, bring four qts water to boil, add penne and cook until al dente, about 7 min.
Meanwhile:
Bring 1 in. water to a boil in pot large enough for your steamer
Add 1 bay leaf
Place chicken breasts in steamer and place over boiling water
Place chicken breasts in steamer and place over boiling water
Steam for 6 min. or until juice runs clear when pricked with knife
Remove chicken breasts to plate to cool
Check water level (add more if needed) bring to boil
Place brocolli florets in steamer and cook until fork tender
Remove skin and ribs from cooled chicken, tear into bite-sized pieces
Add olive oil and garlic to large skillet and cook 1 min. Remove garlic
Add chicken and brocolli to skillet
Add 1 cup Alfredo sauce and reduce heat, cook until heated through
Drain the pasta thoroughly and add to skillet
Toss or stir until Alfredo sauce coats everything
Add grated nutmeg, if desired - Careful - nutmeg will overwhelm other ingredients if used too liberally
Remove to heated platter or individual plates
Serve with crusty bread and a white wine. I recommend Pinot Grigio.
