
Easy Red Flannel hash
This is easy, since you will be using canned ingredients, but feel free to try this with potatoes, beets and corned beef you prepared yourself. This makes a hearty breakfast and will fuel a man for an entire morning of felling trees, chopping, splitting and stacking firewood.
You will need:
2 tablespoons bacon drippings or vegetable oil
1 small sweet onion, diced
1 can diced potatoes
1 can diced beets
1 can corned beef, chopped or shredded
4 eggs
1/2 teaspoon salt
1/2 teaspoon black pepper or paprika
1 tablespoon butter (optional)
Preparation;
In a large iron skillet, heat the bacon drippings or vegetable oil until hot, but not smoking.
Add the chopped onions and salt and cook until onions just start to brown. Add the corned beef, potatoes, beets and paprika and cook until the potatoes and corned beef start to brown.
With a tablespoon, make four indentations in hash mixture and break an egg into each. Place skilet in preheated 350 degree oven and bake for ten minutes or until eggs are cooked to your liking. A few pats of butter on top will add to browning.
