Every year in October our junk mail regales us with a "baking and cooking" booklet... the booklet has become thinner, and the contents weaker, nevertheless there's always a recipe worth trying, and some turn out to be true keepers. This is one of them. I played around with the original recipe as I like my apple squares much thinner, and I was feeling creative... but lazy at the same time, thus the food processor. I added cooking oats to both the dough and the topping, and I used maple sugar instead of granulated sugar. So for the benefit here is my version of "1-Dish apple streusel" from the "simply homemade" booklet.
Ingredients
Dough:
1 1/4 cups all purpose flour
1/4 cup cooking oats
1/3 cup maple sugar (in granules)1 teaspoon salt
1/3 cup butter, cold, cut in pieces
2 teaspoons dry yeast
1/2 cup milk, warm (just a tad warmer than body temp)
2 teaspoons corn starch and 1 teaspoon sugar
1 egg
Apple filling
6-10 apples, peeled and cored
Topping
1/4 cup butter
1/4 cup all purpose flour (or slightly more to get right, sandy consistency)
1/4 cup oats
1/3 cup maple sugar
pinch cinnamon (optional)
Instructions:
Preheat oven to 350 F.
Warm milk in microwave 10 secs at a time until just warm, mix in the spoonfuls of sugar and cornstarch and set aside.
In food processor blend the dry ingredients until the oats are undistinguishable from the flour. Add the egg and the yeast mixture, process a few times until a dough forms and drop onto a baking sheet lined with parchment paper. Roll out the dough to desired thickness (about 1/2 inch) and let sit. DO NOT wash the food processor.
Peel and core apples, cut in thick slices and arrange on top of the dough. Squeeze some drops of lemon juice to avoid excessive browning (optional).
In the food processor, mix the topping ingredients until just crumbly, adding more flour or butter if needed. Sprinkle crumbs on top of the apples and bake for about one hour.
