For Foodie Tuesday: Jamaica Mistake Salad

JAMAICA MISTAKE SALAD

This is a wonderful sweet and sour dressing that started out as a marinade, but something went wrong.  I made this up when I needed a quick salad and was looking for a great sweet Carribean style dressing.  Jamaica mistake caught my eye, sitting there in the store, ready to fill the bill!

1 can Garbanzo Beans

1 can red beans

1/2 red onion or 2 green onions

1 can hearts of palm

1 can pineapple chunks

1 Red Bell Pepper

1 Yellow Bell Pepper

1/4 tsp Tabasco sauce  or hot pepper sauce (Optional if you a punk!  More if you're a heat fiend!)

Pinch of Paprika

4 hard boiled eggs, sliced

Butter lettuce leaves

Julliene the peppers and red onion (or finely chop the green onion).

Rinse and completely drain the beans, artichoke hearts, pineapple chunks and hearts of palm.

Slice the hearts of palms into 1/2 inch coins

Mix the tabasco or pepper sauce into Jamaica Mistake  (start with 1/2 bottle, add more as you go until it's right and good).

Mix dressing into the mix of palm, peppers, onions, pineapple and beans.

Serve on a bed of butter lettuce with a garnish of quartered egg that has been lightly dashed with the pinch of  paprika.

I make a similar but much quieter cannellini bean salad. This sounds like the perfect accompaniment for Jamaican jerked pork.

Honey, you bring the recipes and between those and the ideas in my head and the food in the pantry plus the farmers' markets starting up, I'm sure we could do some serious foodie damage!

Larry: I just saw some scotch bonnet seedlings at Wal Mart. Dang. I still have Cayennes and Tabascos from last summer's garden. They are as hot as I can stand. You're right, though, the real Jamaican salad dressing is three alarms at least!

Scotch bonnet, dried and spread on your property line and lawn just about insures that loose dogs will never bother anyone at the homestead.
